Fruits, vegetables, chocolate, pulses, and teas, among others, are rich sources of phytochemicals; however, only a certain amount has been isolated and identified. Moreover, the wide diversity of these compounds requires optimized extraction methodologies for further characterization and evaluation of healthy properties.
