Author Biography

Spasia Dinkovski is a London-based chef and the person behind the popular food business Mystic Börek. Launched in July 2020, and inspired by Spasia's grandmother's recipes, Mystic Börek is a celebration of second-generation Balkan cooking, delivering phyllo pastries and running sell-out pop-ups all over London. Spasia is an experienced chef, having worked for 15 years in professional kitchens in London and the US. She was voted one of the Observer Food Monthly magazine's "50 things we love in the world of food," and one of London's best pop-ups by Eater magazine. She has had features in The Times, Olive magazine, Time Out, the Telegraph, and the Guardian.
