**Emiko Davies** lives in Florence with her husband and two daughters. She writes about regional Italian food and travel on her blog, as well as for publications such as _Gourmet Traveller_, _Condé Nast Traveler_, Food52 and Italian newspaper _Corriere della Sera_. Her beautiful Italian cookbooks include _Florentine_, _Acquacotta_, _Tortellini at Midnight_, _Torta della Nonna_ and _Cinnamon and Salt_.
